AMERICAN CHOP SUEY
INGREDIENTS
2 tbsp. olive oil
1 medium onion, chopped
2 cloves garlic, minced
1⁄4 tsp. crushed red pepper
1 lb. lean ground beef (at least 90% lean)
1 14 oz. can tomato sauce
1 10.5 oz. can condensed tomato soup
1⁄2 tsp. oregano
Salt and pepper, to taste
1-2 green bell peppers, seeds and ribs removed, cut into 1-inch pieces
1⁄2 lb. cooked pasta
1 Heat oil in large frying pan over medium-high heat. Add onions and cook until translucent, about
3 minutes.
2 Add garlic and red pepper and heat until fragrant, about 15 seconds.
3 Add ground beef, breaking up into small pieces. Cook until beef is fully cooked through.
4 Add tomato sauce, soup, oregano, salt and pepper. Stir until all ingredients are well blended. Bring to a boil, then cover and lower heat to simmer. Simmer for 30 minutes, then add pasta and stir to combine. Set heat to low and cook for
5 minutes.
Serves 4.
