INGREDIENTS
1⁄2 cauliflower head
1 cup besan (gram flour) 1/3 cup rice flour
1 tsp. chili powder
Salt, to taste
Water, as needed
3⁄4 cup olive oil
CAULIFLOWER FRY
1 Cut cauliflower into medium florets.
2 Mix together besan, rice flour, chili powder and salt. Add water little by little into the dry mixture until a slightly runny consistency emerges.
3 Add florets to batter and toss evenly to coat.
4 Heat oil in pan, then add a few coated florets at a time. Cook until golden brown, turning cauliflower with spoon or fork to brown completely.
5 Remove from oil and place cauliflower on newspapers or paper towels to absorb oil.
Serves 4.
