FRENCH GALETTES BRETONNES COMPLETES
INGREDIENTS
9 oz. wheat flour
29 oz. black wheat flour 50 eggs for batter
3 1⁄2 tbsp. salt
3 1⁄2 tbsp oil
1.5 liters water
50 eggs for topping
17 1⁄2 oz. gruyere or other shredded cheese
1 Mix flour with eggs, oil and salt. Then add water, little by little. The dough should be fluid. Let rest for 1 hour.
2 To prepare, pour small amount of batter into a hot, lightly greased pan. When one side is cooked, flip the crepe and crack an egg on top. Top with roughly 1 tbsp. cheese.
3 When the egg white is cooked through, fold the sides of the crepe in toward the center. Salt and pepper, and serve.
Makes 50 crepes.
