INGREDIENTS
GUACAMOLE
6 to 8 cloves garlic (more if you like)
1 tbsp. coarse kosher salt + more to taste
1 to 2 jalapenos, diced 3 to 4 limes
1 red onion, diced
5 to 8 avocadoes
1 bunch cilantro (optional)
1 Press garlic into mixing bowl. Add salt.
2 Add jalapenos. Squeeze 2 limes and add juice to the bowl. Mix well.
3 Add onion to bowl and mix well.
4 Split avocadoes lengthwise and remove pit. Scoop out avocadoes into the bowl, mashing with potato masher as you go. Mix well.
5 Squeeze 1 lime and add juice to the bowl. If using cilantro, chop it up finely and add to bowl. Mix well.
6 Taste; add more salt and lime juice as needed.
Smooth out the top of the guacamole using a rubber spatula. Sprinkle a little more lime juice over the top. Press plastic wrap onto the surface and refrigerate.
Serves 10.
