As we prepared for the 22nd annual Tastes of the World Chef Culinary Conference, we caught up with six of our chef presenters and asked them to share some of their thoughts with us on their careers, their special projects and their culinary experiences. Today we ask three questions of  VIRGINIA WILLIS

As a transfer student from a school where the food was consistently mediocre with questionable nutritional merit, UMass dining has been a phenomenal experience for me. This school, with some of the best college food around, is truly heaven for a food-obsessed health nut like myself. In UMass DCs, the options are always diverse and it is never difficult to make healthy choices. There are always plenty of vegetables and healthy proteins available, not to mention the daily SPE-certified meals that guarantee a balanced meal without having to think too carefully about food choices.

Dining commons are a place like no other; one in which worlds collide, bringing forth students, families, workers, and professors from all walks of life. Just as the tables come in all shapes and sizes, the dining commons provide an atmosphere for individuality and acceptance. Together we gather, not simply to eat, but to savor the joy of companionship in this welcoming community. We taste the wondrous flavors of food that UMass has to offer, and whether one likes spicy, savory, bitter, or sweet morsels, the dining commons never disappoint.

Food, like math, is seemingly universal. Your taste buds are the only tool you need. Unlike math though, food is something I more graciously invite into my life. Food is also home.

As an incoming freshman coming to UMass Amherst, the last thing I was worried about was my diet. I knew UMass had “amazing” food but looking back now, I did not know what that actually meant. The past two years I have spent in the dining halls have changed my life. UMass Dining has exposed me to sustainable, healthy food. I have gotten the chance to eat food that I would normally never buy or know how to cook. From delicious kale smoothies to amazing quinoa salads, I am surrounded by good tasting healthy options everyday.
