COCONUT CREAM FRUIT DIP
INGREDIENTS
1 cup heavy whipping cream
3 tbsp. confectioners sugar
8 oz. cream cheese
1 1⁄2 cup cream of coconut
Variety of fresh cut fruit (e.g., strawberries, ap- ples, bananas)
1 Combine whipping cream and sugar in a bowl. Beat with hand mixer until stiff peaks form, about
3-4 minutes. Set aside.
2 Place cream cheese on a microwave-safe plate and microwave for 25 seconds, or until cream cheese is very soft.
3 Place cream cheese and cream of coconut in a second bowl. Beat until blended.
4 Fold in whipped cream and gently stir until combined. Let chill
3-4 hours or overnight. Serve with fruit and with vanilla wafers, cannoli pieces or graham crackers, if desired.
